Today’s Meatless Monday isn’t a meal recipe, but instead a sauce recipe that you can use to create your own meal. We mix this sauce into buckwheat soba noodles and mix in tofu, grated carrots, green onions and unsalted roasted peanuts. You can also use mixed veggies instead of tofu, rice instead of noodles, or top with fresher ingredients like bean sprouts, cilantro or lime juice. Play around with the possibilities; it’s a very versatile sauce that compliments many flavors.
Spicy Peanut Sauce
1/3 cup peanut butter
1/3 cup vegetable broth
1 tsp crushed red pepper
2 Tbsp honey
1 Tbsp ginger, minced
1 clove garlic, minced
1 Tbsp tamari (soy sauce)
In a large bowl, whisk all ingredients together. This sauce requires no cooking and can be set aside until your meal is hot and ready to serve. Pour over rice or mix into noodles. Serve with choice of toppings.
